Arrange salad greens on serving plates. Cut fillets into bite-size pieces. Heat oil in skillet over high heat. Add arctic char pieces and stir and turn fish
until they are done. about 2 minutes. Don't overcook. Remove fish to plate and keep warm. Deglaze skillet with vinegar then pour over salad. Add olive oil, and thyme or tarragon, and toss
salad lightly. Top salad with arctic char. Makes 2 to 4 servings. Feel free to spice this salad up with some sliced raw vegetables of your choice.
